Nog Pancakes

These fluffy and flavorful pancakes are perfect on a cold winter morning.

  1. Whisk together flour, baking powder and salt.
  2. In a separate bowl, whisk together eggs, eggnog and vanilla, beating well.
  3. Add melted butter and nutmeg.
  4. Add flour mixture, beating just to combine (it’s okay to have a few lumps).
  5. Add 2-4 more Tbsp of eggnog if batter is too thick.
  6. Drop by 1/4 cupfuls onto greased, hot griddle or pan and cook until lightly browned and fluffy, flip and cook until other side is lightly browned
  7. Meanwhile, heat syrup and spices in a small saucepan and simmer gently for 5 minutes.
  8. Remove from heat and let infuse for 15 minutes. Remove cinnamon stick and serve.


  • 2 cups flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 2 eggs
  • 2 1/4 cups Horizon Organic Eggnog, plus more if needed
  • 1 tsp vanilla
  • 2 Tbsp Horizon Organic Butter, melted and cooled
  • 1/2 tsp nutmeg
  • 1 cup real maple syrup
  • 1 cinnamon stick
  • 1/8 tsp nutmeg
