Breakfast Casserole

This easy breakfast can be made ahead and is ideal for busy mornings.

  • 1.5 lb frozen hash browns
  • Salt and pepper
  • 12 eggs
  • 2 cups Horizon Organic Half & Half
  • 3 cups shredded Mexican cheese
  • 2 cups diced ham or sausage


  1. Lightly spray a 13"x9" pan with cooking spray.
  2. Add hashbrowns to pan, along with salt and pepper to taste.
  3. In a large bowl, whisk eggs together, then add half and half, cheese and diced meat.
  4. Pour overtop hashbrowns, cover pan and refrigerate overnight.
  5. In the morning, bake (covered in foil) for 90 minutes at 350°F, until center has set.
  6. Allow casserole to cool before serving.
