These fluffy and flavorful pancakes are perfect on a cold winter morning.
2 cups flour
2 tsp baking powder
1/4 tsp salt
2 1/4 cups Horizon Organic Eggnog, plus more if needed
1 tsp vanilla
2 Tbsp Horizon Organic Butter, melted and cooled
1/2 tsp nutmeg
1 cup real maple syrup
1 cinnamon stick
1/8 tsp nutmeg
Whisk together flour, baking powder and salt. In a separate bowl, whisk together eggs, eggnog and vanilla, beating well. Add melted butter and nutmeg. Add flour mixture, beating just to combine (it’s okay to have a few lumps). Add 2-4 more Tbsp of eggnog if batter is too thick.
Drop by 1/4 cupfuls onto greased, hot griddle or pan and cook until lightly browned and fluffy, flip and cook until other side is lightly browned
Meanwhile, heat syrup and spices in a small saucepan and simmer gently for 5 minutes. Remove from heat and let infuse for 15 minutes. Remove cinnamon stick and serve.
For an adult treat, add 2 Tbsp spiced rum, if desired.
