2 (8-oz) blocks cream cheese, room temperature
1/8 tsp cayenne pepper
1/2 tsp salt
1/2 tsp onion powder
3 cloves garlic, minced
4 green onions, finely sliced
1 red bell pepper, diced (keep stem for serving)
2 cups Horizon Organic Mexican Shredded Cheese, divided
Beat cream cheese until soft, then add cayenne pepper, salt, onion powder, garlic, green onions, red bell pepper and 1 cup cheese. Mix until well combined. Roll mixture into a ball, then use remaining cheese to cover outsides of ball. Wrap tightly in plastic wrap.
Wrap 4 rubber bands around ball to create the ridges of the pumpkin. Refrigerate overnight to set, then add red bell pepper stem to top before serving.
