Preparation

  1. Heat olive oil in skillet over medium heat.
  2. Add chopped chicken and cook until mostly cooked through, 3-5 minutes.
  3. Add taco seasoning along with 1/4 cup water, stirring occasionally until sauce forms and chicken is cooked through, another 3-5 minutes.
  4. Divide chicken into 8 taco shells and top with lettuce, tomato, olives, cheese and a dollop of sour cream.
