Preparation

  1. In a saucepan or fondue pot, heat beer and garlic over medium heat until mixture bubbles.
  2. Turn down heat and simmer for 5 minutes.
  3. Meanwhile, toss together shredded cheese and flour in a medium bowl.
  4. Remove garlic from beer or broth with a slotted spoon and discard.
  5. Increase heat back to medium and slowly add cheese, stirring until all cheese has melted and mixture is smooth, about 5 minutes.
  6. Stir in mustard and cayenne. Turn down heat to low and serve.

ingredients

  • 1 cup lager-style beer (or vegetable or chicken broth)
  • 2 cloves garlic, quartered
  • 2 (6-ounce) packages Horizon Organic shredded Cheddar cheese
  • 1 tablespoon flour
  • 2 teaspoons Dijon mustard
  • Dash of cayenne pepper, to taste

Things to dunk:

  • Apple slices
  • Steamed broccoli, cauliflower or new potatoes
  • Sourdough or dark rye bread, cubed
