Preparation

  1. Combine flour, sugar, baking powder and spices in a small bowl.
  2. Beat in egg, 1 Tbsp whole milk and mashed carrots until combined, then stir in and shredded carrots.
  3. Place mixture in a microwave-safe mug and microwave for about 60 seconds, or until an inserted toothpick comes out clean.
  4. To make icing, whisk together powdered sugar and a splash of milk, then drizzle on top of cake before serving.

ingredients

  • 3 Tbsp flour
  • 2 Tbsp sugar
  • 1/2 tsp baking powder
  • Pinch of cinnamon, nutmeg and ginger (or pumpkin pie spice)
  • 1 Horizon Organic Egg
  • 1 Tbsp Horizon Organic Whole Milk, plus additional for icing
  • 2 Tbsp mashed carrots (boil in water until tender, then mash)
  • 1 Tbsp shredded carrots
  • 2 Tbsp powdered sugar
