Carrot Mug Cake

3 Tbsp flour
2 Tbsp sugar
1/2 tsp baking powder
Pinch of cinnamon, nutmeg and ginger (or pumpkin pie spice)
1 Horizon Organic Egg
1 Tbsp Horizon Organic Whole Milk, plus additional for icing
2 Tbsp mashed carrots (boil in water until tender, then mash)
1 Tbsp shredded carrots
2 Tbsp powdered sugar


Combine flour, sugar, baking powder and spices in a small bowl. Beat in egg, 1 Tbsp whole milk and mashed carrots until combined, then stir in and shredded carrots. Place mixture in a microwave-safe mug and microwave for about 60 seconds, or until an inserted toothpick comes out clean. To make icing, whisk together powdered sugar and a splash of milk, then drizzle on top of cake before serving.
