Vanilla Currant Bread

Inspired by traditional Irish soda bread, this simple loaf is sweetened with currants and vanilla yogurt. It’s perfect served fresh from the oven, and also makes excellent toast the next day.

Ingredients

  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1/4 cup sugar (or up to 2 Tbsp. more for a sweeter loaf)
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 tablespoons Horizon Organic butter, cut into very small pieces
  • 1/2 cup dried currants
  • 3/4 cup vanilla yogurt

Preparation

  1. Preheat the oven to 350°F. Grease a baking sheet or line with parchment paper.
  2. Whisk the dry ingredients together in a spacious bowl.
  3. Add the butter and mix with your hands, using a pinching and tossing motion, until the butter is well distributed through the flour in pea-sized bits with no oversized lumps remaining.
  4. Stir in the currants and the yogurt. Turn the mixture out onto a floured surface and knead for about a minute, until it forms a cohesive dough.
  5. Shape into a disk about eight inches in diameter, place on the baking sheet, and bake for 45 to 55 minutes, until crusty and firm when pressed in the center.
  6. Serve fresh and warm with Horizon Organic butter.
