Strawberry Matcha Pudding

Fresh and fruity, this Strawberry Matcha Chia Pudding layers sweet berries with matcha and creamy chia to create a perfect grab and go option!

Ingredients

  • 1 tsp matcha powder
  • 2 tbsp water
  • 3/4 cup of Horizon Organic 2% milk
  • 1 tbsp maple syrup or to taste
  • 3 tbsp chia seeds

For strawberry layer:

  • 1 container strawberries
  • Honey to taste

Preparation

  1. Combine Matcha powder and water with whisk until well mixed.
  2. Add in milk, Chia seeds, maple syrup, and stir. Set aside in the refrigerator.
  3. Chop strawberries and add to a small pot with honey to taste.
  4. If the mixture is looking too thick, add a splash of water. Heat until strawberries have cooked down to desired consistency.
  5. Layer into your containers: Adding strawberries on the bottom, then the matcha chia pudding. Top it off with Vanilla Greek yogurt & a dusting of matcha powder. Refrigerate for an additional 1-2 hrs and enjoy!

Serves: 2 (You can multiply the recipe by the number of containers that you have/are trying to fill)
Cook Time: N/A (let sit in fridge for 1-2 hours)
