Preparation

  1. Combine eggs, cottage cheese and flaxseed in a large bowl.
  2. Allow to sit for several minutes while you heat a pan over medium heat.
  3. Melt 1/2 Tbsp butter in pan, then cook pancakes one at a time for about 3 minutes on each side.
  4. Top with whipped cream and fruit, serving immediately.
