Shredded Mexican Cheese

Taco Stuffed Peppers

An easy weeknight dinner that's packed with flavor!

4 bell peppers, sliced in half length-wise and de-seeded
1 lb taco flavored ground turkey, browned (or add taco seasoning while browning)
15-oz can black beans, drained and rinsed
16-oz jar salsa
1 cup frozen corn
2 cups Horizon Organic Shredded Mexican Cheese, divided
8.5-oz bag microwaveable brown rice, cooked
Horizon Organic Sour Cream
Diced tomatoes, cilantro and pickled jalapeños, for serving (optional)


Preheat oven to 350ºF and line a baking sheet with parchment paper or a silicon mat.

Place the peppers on the baking sheet. In a large bowl, mix together with browned taco meat, black beans, salsa, frozen corn, 1 cup cheese and the cooked rice. Divide the mixture amongst the peppers and bake for 30 minutes.

Add the remaining cheese to the top of the peppers and bake for 5 more minutes. To serve, top with sour cream, diced tomatoes, cilantro and pickled jalapeños.
