Sweet Potato Pie with Whipped Cream

Homemade whipped cream makes this holiday staple simply irresistible.

Ingredients

1/3 cup Horizon Organic butter, softened
1/2 cup sugar
2 Horizon Organic eggs, lightly beaten
3/4 cup Horizon Organic whole milk
2 cups mashed sweet potatoes
1 tsp vanilla extract
1/2 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp salt
1 9-inch unbaked pastry shell
2 Tbsp sugar
1 cup Horizon Organic heavy whipping cream

Directions

Preheat oven to 425°F. Cream butter and 1/2 cup sugar in a large bowl, then add eggs and mix well. Add milk, sweet potatoes, vanilla, cinnamon, nutmeg and salt, mixing well. Pour batter into pie shell and bake for 15 minutes. Reduce heat to 350°F and bake for 35-40 minutes. Cool.

While pie is cooling, prepare whipped cream. Whisk 2 Tbsp sugar and heavy whipping cream until stiff peaks form. Serve each slice of pie with a dollop of homemade whipped cream and enjoy.
