Pumpkin Spice Maple Cream Layered Mug Cake

Sugar-free maple cream frosting between layers of perfect pumpkin spice cake.
4 Servings


2 Horizon Organic Eggs
1/4 cup Horizon Organic Half & Half
1/3 cup pumpkin puree (not pie filling)
1/4 cup coconut flour
1/3 cup sweetener of choice
1/4 tsp baking powder
1/2 tsp pumpkin pie spice (or use 1/4 tsp cinnamon + 1/4 tsp cloves)
Pinch salt

Maple Cream Frosting
4 oz cream cheese, softened
1/2 tsp maple extract
1/2 tsp cinnamon
1/2 tsp pumpkin spice
2 Tbsp Horizon Heavy Whipping Cream


Whisk eggs, half & half and pumpkin puree until combined, then stir in remaining cake ingredients.

Grease two ramekins and fill with batter. I used quiche ramekins, which are more shallow. Microwave one cake at a time for 1- 2 minutes or until toothpick inserted into center comes out clean. Combine all frosting ingredients. Allow cakes to cool completely before frosting.

TIP: If you'd rather use an oven, bake these at 350°F for 15 minutes.
