Frittata Muffins

Ingredients

1/2 cup chopped red pepper
1/2 cup chopped asparagus
2 handfuls spinach
1 Tbsp oil
6 Horizon Organic Eggs
1/2 cup Horizon Organic Milk
1/4 tsp salt
1/2 tsp pepper
1/2 cup Horizon Organic Shredded Cheddar Cheese

Directions

Heat oven to 350ºF. Grease muffin pan.

Sauté chopped red pepper, asparagus and spinach with one tablespoon of oil for 5 minutes. Do not overcook; the pepper and asparagus should still be crunchy.

Whisk together eggs and milk in mixing bowl. Stir in salt and pepper, then stir in cheese and cooked veggies. Use a measuring cup to fill each muffin cup with 1/2 cup of egg mixture.

Bake for 20 minutes, or until set. Remove from oven and cool on rack for 5-7 minutes. Serve warm and enjoy.
