1 1/4 cups Horizon Organic Milk, separated
1 Tbsp + 2 tsp cornstarch
3 cups Horizon Organic Shredded Cheddar Cheese + Shredded Mexican Cheese
2 tsp taco seasoning
Heat 1 cup milk in saucepan over medium heat. While milk heats, combine remaining 1/4 cup milk and cornstarch in small bowl. Stir until smooth, then set aside.
Once milk is hot and just barely beginning to steam, add in cheese, taco seasoning and cornstarch-milk slurry. Whisk constantly until cheese is melted. Continue heating and occasionally whisking. Once cheese sauce barely comes to a boil, it will thicken up quickly. Reduce heat to simmer until ready to serve, reheating as necessary to maintain smooth texture.
Serve with tortilla chips and other nacho toppings like salsa, avocado, jalapenos, diced cooked chicken, black beans, etc.
