  1. Put cucumber, 1 cup yogurt, chicken broth, green onion and salt in a food processor.
  2. Process until smooth. Transfer to a bowl and stir in the remaining yogurt and red onion. Cover and chill several hours.
  3. Sauté garlic in butter. Stir in cumin, salt and spinach. Cool and stir in yogurt until evenly blended.
  4. Serve cucumber soup in 4 bowls. Spoon several dollops (1 tsp. each) of the garnish in a circle on top of each serving. Then pull the tip of a sharp knife through the dollops to make swirl patterns.


  • 2 peeled seeded cubed cucumbers
  • 2 cups plain yogurt (save 2 Tbsp. for garnish)
  • 1/2 cup chicken broth
  • 2 chopped green onions (no green leaves)
  • 1/8 teaspoon salt
  • 1 tablesppon diced red onion


  • 1 tsp. Horizon Organic butter
  • 1 4-oz. jar organic strained spinach (available as baby food)
  • 2 minced cloves of garlic
  • 1/2 teaspoon cumin
  • 1/8 teaspoon salt
  • 2 tablespoons plain yogurt
