Preparation

  1. In small bowl, combine yogurt, honey, mustard, dill, salt and pepper for dressing.
  2. Steam fresh peas for 1-2 minutes until bright green and just tender. If using frozen peas, place in colander and rinse under hot water for 1 minute until just thawed.
  3. In a large bowl, combine peas, water chestnuts, red pepper, celery and green onions.
  4. Add dressing and toss to coat. Refrigerate for 1-2 hours or overnight to let flavors develop.

  • 1 teaspoon honey
  • 2 teaspoons Dijon mustard
  • 1 tablespoon chopped fresh dill
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 2 cups shelled fresh peas or frozen tiny peas
  • 1 (8-ounce) can sliced water chestnuts, chopped
  • 1 red bell pepper, seeded and chopped
  • 1 cup chopped celery
  • 1/4 cup sliced green onions
