1/2 cup Horizon Organic plain yogurt
1 teaspoon honey
2 teaspoons Dijon mustard
1 tablespoon chopped fresh dill
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
2 cups shelled fresh peas or frozen tiny peas
1 (8-ounce) can sliced water chestnuts, chopped
1 red bell pepper, seeded and chopped
1 cup chopped celery
1/4 cup sliced green onions
In small bowl, combine yogurt, honey, mustard, dill, salt and pepper for dressing.
Steam fresh peas for 1-2 minutes until bright green and just tender. If using frozen peas, place in colander and rinse under hot water for 1 minute until just thawed.
In a large bowl, combine peas, water chestnuts, red pepper, celery and green onions. Add dressing and toss to coat. Refrigerate for 1-2 hours or overnight to let flavors develop.
